The mirror rule in New York
Yes. New York (N.Y. Veh. & Traf. Law § 375(10), (10-a)) requires an outside mirror on the driver's side. A Wrangler's or Gladiator's factory mirrors are bolted to the doors, so pulling the doors takes them off too. Bolt a hinge or A-pillar mirror on before you drive.
“unless such vehicle is equipped with an adjustable side view mirror which shall be affixed to the left outside of such vehicle”
Put your mirrors back
Your factory side mirrors ride on the doors. These mount to the hinges or the A-pillar so they stay when the doors don't. Every link goes to Amazon.

Do you need doors at all?
We didn't find any New York statute requiring doors, but we couldn't rule one out from the official code either. The equipment rules (mirrors first) are what usually draw a stop.
New York requires a left outside mirror on 1968+ models (VTL § 375(10-a)), so doors-off Wranglers/Gladiators need an aftermarket driver-side mirror.
